Greek-Inspired Roasted Halibut and Potatoes
Oven-baked halibut with potatoes, tomatoes and herbs for a healthy and quick weeknight dinner.

Ingredients
- 2 lbs baby potatoes, washed and cut into wedges
- 1 yellow onion, halved and sliced
- 2 garlic cloves, roughly chopped
- ½ tsp dried oregano or 1/2 tbsp chopped fresh oregano
- 2 tbsp olive oil
- ½ lemon, cut into wedges
- 2 large tomatoes, cut into wedges
- 2 Halibut fillets
- small handful parsley, roughly chopped
Method
Preheat the oven to 375F.
Place the potatoes, onion, garlic, oregano and olive oil into a roasting pan, add a pinch of salt and then mix together until well coated. Bake for 15 mins, stir well and then cook for another 15 minutes.
After 30 minutes of cooking, remove from the oven, add the lemon and tomatoes, and bake for 10 mins. Remove again and place the fish fillets on top and cook for 10 minutes more.
Remove from the oven and serve. Garnish each plate with freshly chopped parsley.
