Oven Baked Miso Tofu with Broccoli and Sweet Potatoes
A super nourishing easy to make weekday meal for 3-4 people.

- 2 cups Brown Rice
- 1 block of tofu, drained and cut into bit sized cubes
- 1 Sweet Potato, peeled and cut into bite sized cubes
- 1 head of Broccoli, washed and cut into pieces
- For the sauce
- 3 tbsp tamari
- 2 tbsp miso paste
- 2 tbsp water
- 3 tbsp sesame oil (or sub olive oil)
- 1 clove garlic
Preheat the oven to 350 degrees F.
Wash and cut the tofu and veggies, place on a baking tray.
Combine the miso dressing ingredients in a blender until smooth.
Pour on top of the veggies and tofu and stir until all the items are coated.
Place in the oven and bake for 30 minutes, stirring occasionally.
Cook 2 cups of rice according to the directions on the package.
Serve the tofu and veggies on rice.
Store leftovers in the fridge for several days
