Chicken Fried Rice with an Indian Twist. A great way to use up leftover rice and add some new flavours to your meal routine!

Ingredients
- 2 Tbsp Extra Virgin or Coconut Oil
- 1 Yellow Onion slice
- 1 cup Green Cabbage sliced
- 1/2 cup Carrots, chopped
- 2 Eggs
- 2 cup Red Pepper sliced
- 1 tbsp The One Curry Masala
- 3 cloves Garlic (peeled and grated or chopped fine)
- 1/2 tbsp Ginger (peeled and grated or chopped fine)
- 3 tbsp Oil
- 1 tbsp Tamari or Soy Sauce
- 1/2 cup Basmati Rice
- 1/4 cup Cilantro (washed and chopped)
Directions
- Add 1/2 cup of basmati rice and 1 1/4 water. Bring to a boil, cook for 10-15 minutes. Once cooked, set it aside uncovered for it to fully cool. (Alternatively, use leftover rice, or make the rice ahead of time
- Heat oil in a frying pan. Add the ginger and garlic, carrot, peppers and cabbage cook for 2-3 minutes.
- Add 1/2 Tbsp of The One Curry – stir well.
- Add 2 eggs and scramble them in the pan for a minute.
- Add the cooked rice and stir well.
- Add the soy sauce and the other 1/2 Tbsp of The One Curry
- Bring the flame to high and cook for 3 – 5 minutes without burning the rice.
- Top with Cilantro. Add salt and pepper as needed.
Serve this Curried Vegetarian Fried Rice with a salad.
