Add some spice to your life with the Vegan Chickpea Curry Meal. Serve with a side of rice, cauliflower rice or naan (not included).

Ingredients
- 2 tbsp Olive Oil or Coconut Oil
- 1 can Chickpeas
- 1 cup Yellow Onion chopped
- 2 1/2 cups Tomato chopped
- 1 tbsp Garlic grated
- 1 tbsp Ginger greeted
- 2 tbsp The One Curry Masala
- 1 tbsp Lemon juice
- 1/2 tsp Sea Salt
- 1/4 cup Cilantro chopped
Directions
- Add 2 tbsp oil to a medium sized pot. Add the chopped onions, grated ginger and garlic and sauté for a minute.
- Add 2 1/2 cups of chopped tomatoes and sauté for 3 minutes.
- Add 2 tbsp of THE ONE CURRY and 1/2 tsp of salt.
- Add the chick peas and stir well.
- Add 1 cup of water and the lemon juice and simmer for 30 minutes.
- Sprinkle some chopped cilantro, serve with rice or naan
- Enjoy!
This curry is also a great way to use up vegetables you have leftover in the fridge that need to be used. Chop them to be the same size as the chickpeas and add them when adding the chickpeas.
