Roasted Salmon with Garlic Cabbage and Kale

Ingredients

  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt
  • 5 tablespoons extra virgin olive oil, divided
  • 1 salmon filet, cut into 4 pieces, skin on
  • 1 bunch Green kale, stems removed, leaves torn into bite-sized pieces
  • 1/2 head Green Cabbage, sliced thin
  • 2 garlic cloves, minced
  • Juice of 1 lemon

Method

1

Preheat the oven to 400F.
Combine paprika, oregano, garlic powder and 1/2 tsp salt in a bowl.
Use Olive Oil to grease a baking pan, place the fish pieces on the baking pan skin side down
Top the salmon with the herb mixture
In a large bowl, mix the cabbage and kale, add 2-3 Tbs Olive Oil, 2 cloves of minced garlic and a pinch of salt
Place the kale and cabbage mixture on the baking pan around the salmon
Bake for 15-20 minutes until the salmon is cooked. 
Serve on plates with sliced avocado and a drizzle of lemon juice.
