Ghana Favourite Pumpkin Pie
Pastry
2 cups all purpose flour
1 tsp salt
2/3 cup of shortening
1/4 cup cold water
a dash of vinegar
Combine flour and salt in a mixing bowl. Cut in shortening until the mixture is crumbly. Add small amounts of ice water and vinegar until the dough is moist enough to hold together.
Forms two balls, roll until the size of your pie plate. Bake at 450F for 10-12 minutes until golden. Cool completely before adding filling.
Filling
2 eggs, lightly beaten
3 cups cooked pumpkin
3/4 cups sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1 and 2/3 c light cream or milk substitute
Mix well, fill the crust and bake at 350F for 45 minutes.
