High Protein School Friendly Granola Bars
2 cups rolled oats
1 cup cooked chickpeas mashed
½ cup raw pumpkin seeds
½ cup raw sunflower seeds
½ cup dried fruit blend (Fruit D’Or Mixed cranberries, cherries and blueberries)
½ cup shredded unsweetened coconut
2 teaspoons cinnamon
½ cup maple syrup
½ cup tahini
2 flax eggs (4 Tbs Ground flax in 12 Tbs warm water, let sit for 10 min)
½ tsp sea salt
Mix dry ingredients together, add wet ingredients. Mix together and bake for about 20 minutes at 350, until browned. Cut into pieces, freezes well.
